Cooking and The Skjaldborg

    Here in Texas, we BBQ.

    This is a 120lb Hind Quarter that we Smoked for 13 hours and then carved. The final
    link is for a the carving. It may be NSFW audio so be careful =)


    Edit for Gheist:
    No marinade used, only a dry rub.
    Rub consits of Black Pepper, Salt, Garlic Powder, Yellow Mustard, All Spice, Chicory, Cayene Pepper, Ginger, and brown sugar.
    Fire is Pecan and kept at about 250 to 280 degrees
    Hind Quarter was brought up to room temperature before seasoning. Very important it will greatly increase your cooking time if the leg is still cold /frozen in the center.

    Once the leg is on the grill it is always best to keep the smoker closed. every time someone wants to peek and look, stop them. you should only have to open it to a) put in more fuel or b) rotate the leg
    during the cookign to even out the color and temperature for the side farthest from the heat source.

    Some of my personal favorites I have cooked recently:

    Chili, but sweeter, with red bell pepper, green bell pepper, ground turkey, and sweet corn.

    Seafood fajitas, krab, shrimp, red bell pepper, green bell pepper, fresh garlic, red onion.... and some red pepper flakes for some kick.

    Turkey pot pie... left over turkey, celery, carrots, potatoes, in a pie crust with gravy on it.

    Today, was the chili 8)

    First for everything I reckon, it's late August and that means kräftskivor (crayfish parties) in the Nordics. So I bought me a batch of 40(ish) crayfish and boiled them according to the age old recipe (sea salt, sugar, crown dill). Traditional kräftskiva also means that you toast for every crab, so I might be contributing to the "i am trashed" -thread tomorrow (as the crabbies need to marinade in the saltwater for about a day).

    In addition to these, the menu of the evening includes BBQ chicken (marinated with my ultra-secret recipe) and a lot of booze.

    Anyone have any recipies or knowledge about grilling potatoes? It randomly crossed my mind and "grilled potatoes sounds fucking delicious and i want to try". I gather you parcook them then finish cooking on the grill but aside from that i dont know anything.

    Take your average roasting potato, put some light olive oil, salt and pepper. Place it in the top rack of the grill if you have one or off direct heat and let it cook with the lid on for about 50 minutes. Though you are actually just baking the potato but your using the grill instead, this method works best with charcoal grills because you are getting the aroma of the charcoal. You can still use propane but it wont be the same. there is also the method of wrapping them in foil and laying them in the coals, you have to watch them a lot if you do that. Every potato dish I know is either frying, baking, cooking in pan, combination of pan and baking. but I have yet to see anything on grilling besides just using the grill to "bake" the potato.

    though, a waffle fry in a veg grill pan with holes in it for grilling might work.

    Saw a recipie where you partially cook it inside then it looks like you slice it cover it in something to keep in moisture (recipie was using mustard and mayo) then grilled it.

    Ill post link when i get back but it was slicing then simmering then grilling.

    I'm going to correct this, works best in a WOOD FIRE grill, but those're excessively expensive and I'd be shocked if you had one on hand :p Charcoal is slightly better than gas. XD Burying potatoes in a roasting pit is amazing.

    I have recently found I have a talent for baking. My latest creation is a pumpkin brownie for a friend's autumn festival.

    Nah, I might make some things for the Borg eventually. Right now I'm still finding my groove. If we ever do a Borg party here in the States I'll definitely bring treats.
